Our Story
Dropout Bakery began with a sweet tooth, a bold decision, and a passion for doing things differently. Lacey Evans and William Allam met while studying at a design school in Los Angeles—Lacey was focused on fashion, and William on interior design. But neither of them felt fulfilled in their fields. They decided to leave college behind, move to Mobile, Alabama, and start fresh. Back in Mobile, Lacey earned her Cottage Food Law license and began baking out of their apartment kitchen. She started posting her creations on social media, and word spread quickly. Friends and family started requesting birthday cakes, and soon the demand became too big to ignore. That’s when the pair connected with the Downtown Mobile Alliance and the Innovation Portal, who helped them take things to the next level. Lacey took charge of the menu and social media, while William handled the business side—and found his own passion in baking croissants, which quickly became a customer favorite. William also used his design skills to build custom display cases for their shop, and together they created a space that felt like home. Today, Dropout Bakery is known not just for its pastries and cakes, but also for its popular branded merch and warm, welcoming vibe. What started as a leap of faith turned into a full-fledged bakery built on creativity, hustle, and a love of sweets.
